Mustard oil is the vegetable oil which is contained about 30% in the Black Mustard seeds.
This oil has a high content of unsaturated fatty acids. Its use as a food is typical and widely common for Indian and Bengali cuisine, but it is not absolutely recommended, since the raw or insufficiently heated mustard oil contains glycerides of erucic acid as well as isothiocyanates.
Therfore, it must be heated almost to the roasting before being used as food - like this, it becomes an exquisite component mainly in asian dishes.
We recommend mustard oil for external use only. In the tradition of Ayurveda, it is traditionally used for stimulation and for improving circulation. Normally, it is used as an additive in massage oils, for example together with sesame oil as a base.
