Cinnamon is a very old spice that is mentioned several times in the Old Testament. Cinnamon comes from the evergreen cinnamon tree and is not a fruit, but the inner bark of the cinnamon tree, which has been stripped of its outer bark.
Cassia cinnamon is mainly cultivated in South and Southeast Asia. Cassia cinnamon has a thicker, darker bark and a stronger, more aromatic, sweet and spicy flavour compared to the milder Ceylon cinnamon.
Cassia cinnamon is used in many ways, e.g. for sweet dishes, but also for savoury dishes such as curries and meat dishes. It is also used to flavour tea and has always been an important ingredient in Yogi teas, for example.
