Fennel is native to the Mediterranean region, where it finds what it needs: heat and calcareous soils. Fennel seeds are not only a spice for cooking healthy but also a medicinal plant, which is known since old times. The Saint Hildegard of Bingen used the fennel to cure many pains.
Fennel, due to its high content of essential oil has a very aromatic, almost sweet flavor, reminiscent of licorice. He is best known as tea, for example for young children or for good digestion. In India, fennel is often served after dinner in small amounts, like a snack, ideally with rock salt.
