Curry leaves (botanical name: Murraya koenigii) are a real "powerhouse" in Ayurveda and cooking. They are said to balance all three Doshas (Vata, Pitta, Kapha), and are rich in antioxidants and antimicrobial as well as other positive properties.
When used for coocking, Curry leaves are often fried in oil or ghee at the beginning to set free their aromatic compounds. In addition with other spices, they make for a tasty base for dals and curries.
The leaves stay intact or soften when cooked, serving as a delicious, aromatic flavor.
The dried and ground Curry leaves are also often used as a vital ingredient in chutneys or for rice dishes.
