Karela (botanical name: Momordica charantia) is a vegetable that is often offered fresh at markets in Asia and looks like pickled cucumbers with a nubby surface. Karela tastes quite bitter, which is already suggested by its other names such as bitter melon or bitter gourd.
In India, Karela forms the basis in many recipes and dishes, often accompanied by the advice to eat it at least twice a month. This is probably also due to the fact that Karela, with its bitter taste, represents a healthy antipole to the (not only in India) very widespread and much consumed sweet dishes.
