Mustard is one of the oldest known spices and has been cultivated since ancient times. In Asia, the mustard plant is valued mainly because of their green leaves - the mustard green that is used as a vegetable - and for the mustard seeds.
The raw, whole and organic mustard seeds have no taste but develop a rich, nutty scent after roasting. The famous sharpness of the mustard comes from an enzyme that is active only when the seeds are crushed and mixed with warm water.
Throughout Asia, mustard seeds are used for marinating, for pickles and for seasoning. Particularly in Malaysia, the whole mustard seeds are mainly used for vegetable dishes and Daals.
